Salmon is typically associated with European cuisine. However, China's Xinjiang province is now home to a thriving salmon industry. Xinjiang, with its numerous rivers and lakes, offers ideal conditions for salmon farming. The region's cold climate mirrors the conditions found in their native habitat. Xinjiang salmon is known for its rich flavor and firm texture. Renowned for these qualities, it has become a favored ingredient in sushi, sashimi, and a variety of other dishes.
